Steak sauce: chimmichurri

I did some sirloin steak and spicy fries this weekend and wanted to try a different sauce from peppercorn. I’d found chimmichurri a while ago as a low fat diet option with steak. Providing your steak is lean and you have it with boiled potatoes it’s actually quite diet friendly.

Chimmichurri isn’t limited to steak sauce – apparently its used on everything in Argentina. And very good for dipping chips in too!

It’s a parsley sauce and providing there’s parsley it seems you can add anything else of your choosing. When looking for a recipe I found other herbs included oregano, basil, thyme and coriander. The sauce substance provided by red wine vinegar, white wine vinegar, lemon juice, sherry or any combination of them along with olive oil.

Then there’s the addition of chillis, garlic, shallots or onions or other flavours.

After reading them all I combined my favourite elements with what was in my fridge to make my own. It was delicious, with quite a hit of chilli and lemon without being too overpowering.

Serves 4

2 shallots roughly chopped
2 garlic cloves roughly chopped
Large handful of chopped fresh parsley
Smaller handful chopped fresh coriander
1 large red chilli roughly chopped
2 small red chillis roughly chopped (leave out for milder taste)
Juice of 1 lemon
3 tsp red wine vinegar
5-7 tbsp olive oil
Salt & pepper

1. Put all the ingredients and about half the oil in a food processor or blender and whizz to a rough paste.
2. Add the remaining oil slowly until the paste is more of a thickish sauce. Only add as much as is needed.
3. Adjust seasoning and lemon juice as required.
4. Cover and leave in fridge for a couple of hours to infuse
5. Serve with steak, empanadas, burritos or anything else you like!
